Our North Atlantic salmon is deep-skinned and boneless and so is perfectly versatile for a range cooking methods and cuisines. Our favourites at the moment are pan-fried with harissa and chickpeas or a simple salmon sweet chilli stir-fry to create a simple & quick midweek supper.

One of my interesting sourcing trips was to the highlands of Scotland to spend three days following the farming life cycle of Atlantic Salmon. The farming process mimics the growth of a wild salmon and the process sees the fish transfer from freshwater as juveniles into seawater pens as they reach maturity, the process takes 6 -12 months. We only source from Global Gap accredited farms, aquaculture is a key pillar in sustainable fish sourcing and consumption for our future.
Salmon came well packed and was excellent quality. Opted for the larger size portions which was more than enough.
