Dover sole is renowned for its delicate flavour – the perfect centrepiece for an indulgent fish supper. Caught in South West waters, our Dover sole is quickly frozen to retain its flavour.

Product description

Dover sole is best simply cooked so you can really appreciate the flavour. We like this pan-fried with butter and capers, finished with a squeeze of lemon.

This Dover sole is perfect baked whole and can be done from frozen too. Smother with butter and lemon juice and season lightly with salt and pepper. Roast for 15-20 minutes or until a knife goes easily through the flesh to the bone.

Thanks to a fishery recovery plan in Cornwall, stocks of Dover sole are now at acceptable levels, which means we are happy to source them. This is good news because a simply grilled Dover sole is one of my personal favourites. It’s a guilty pleasure of mine and if I find myself at home for dinner alone, I always make sure I have a few Dovers in the freezer ready to go.
