A fresh simple-to-prepare scallop starter that is quick and easy to cook.
Ingredients
- 1 bag extra large roeless scallops
- 2 garlic and parsley butter hearts
- 1 sachet parsley and panko breadcrumbs
- 1 handful flatleaf parsley roughly chopped
- crusty bread to serve
Instructions
- Preheat grill to a medium heat.
- In a frying pan, add 1 tbsp of vegetable oil over a high heat.
- Place the scallops down into the pan and reduce the heat to medium.
- Cook for 1-2 minutes, until the scallops start to turn a golden colour.
- Flip the scallops and add the butter hearts to the pan. Allow to melt, and sprinkle the breadcrumbs on top of each scallop.
- Place the pan under the preheated grill until the breadcrumbs have become toasted and crisp.
- To serve, divide the scallops between two plates and serve with warm, fresh crusty bread and a sprinkle of fresh chopped parsley.
Notes
Pat dry the scallops before frying to prevent drying out during cooking.
