Sautéed Scallops with Garlic Butter, Lemon and Parsley

extra large roeless scallops

garlic and parsley butter hearts
1
sachet
parsley and panko breadcrumbs
1
handful
flatleaf parsley
roughly chopped
crusty bread
to serve
Instructions
Preheat grill to a medium heat.
In a frying pan, add 1 tbsp of vegetable oil over a high heat.
Place the scallops down into the pan and reduce the heat to medium.
Cook for 1-2 minutes, until the scallops start to turn a golden colour.
Flip the scallops and add the butter hearts to the pan. Allow to melt, and sprinkle the breadcrumbs on top of each scallop.
Place the pan under the preheated grill until the breadcrumbs have become toasted and crisp.
To serve, divide the scallops between two plates and serve with warm, fresh crusty bread and a sprinkle of fresh chopped parsley.
Notes
Pat dry the scallops before frying to prevent drying out during cooking.
