Orange and Rosemary Roasted Arctic Char Portions
A fresh alternative to meat based roast, with a zingy and fragrant glaze
Ingredients
- 4 Arctic Char Portions (560g)
- 2 Oranges zested
- 2 sprigs of Rosemary leaves picked and stalks discarded
- 2 tsp Sugar
- 2 cloves Garlic peeled and crushed
- 1/2 tsp tablesalt
- 2 tbsp veg oil
Instructions
- In a small food processor add in the salt, sugar, orange zest, rosemary leaves and garlic cloves and blitz to a coarse paste, scrape the sides of the processor and add in 1 tbsp. veg oil and blitz again to create a wet paste.
- Evenly spread the mixture over each portion of the fish.
- In a large oven proof pan, heat the remaining veg oil over a high heat on the stove, once hot turn the heat down to medium, carefully lay the Arctic char portions skin side down and place the pan in the centre of a pre-heated oven (180.c).
- Cook in the oven for 12-14 minutes until the char is cooked
- Serve with a selection of green vegetables including roasted asparagus.
