In a small food processor add in the salt, sugar, orange zest, rosemary leaves and garlic cloves and blitz to a coarse paste, scrape the sides of the processor and add in 1 tbsp. veg oil and blitz again to create a wet paste.
Evenly spread the mixture over each portion of the fish.
In a large oven proof pan, heat the remaining veg oil over a high heat on the stove, once hot turn the heat down to medium, carefully lay the Arctic char portions skin side down and place the pan in the centre of a pre-heated oven (180.c).
Cook in the oven for 12-14 minutes until the char is cooked
Serve with a selection of green vegetables including roasted asparagus.
