Lightly Dusted Squid Rings
Try this simple calamari recipe for an authentic taste of Greece at home. Great as a starter as part of a seafood platter, serve with a quick aioli to make the squid sing.
Ingredients
- 700 g cleaned squid tubes
- vegetable oil for deep frying
- 250 g plain flour
- ½ tsp cayenne pepper
- ½ tsp salt
- 2 whole eggs beaten
- 200 ml mayonnaise
- 1 clove garlic minced
- ½ whole lemon juiced
Instructions
- Slice the squid tubes into 5mm thick rings. To make the aioli, whisk together the minced garlic, lemon juice and mayonnaise and set aside.
- For the calamari, half-fill a wok or large saucepan with vegetable oil. Place over a medium heat.
- While the oil is heating, place the flour, cayenne pepper, smoked paprika and salt in a bowl and stir. Drop in the squid rings and coat evenly.
- To test the temperature of the oil, drop in a small piece of bread. If it becomes golden and crispy within a minute, the oil is ready to use.
- Dip the floured squid into the beaten egg and carefully place into the oil. Fry for 2-3 minutes until golden. Remove from the oil and let them sit on kitchen roll before serving alongside the aioli
Notes
This is great as part of a seafood sharing platter or for a starter as part of a Mediterranean dinner party.
