Try this simple calamari recipe for an authentic taste of Greece at home. Great as a starter as part of a seafood platter, serve with a quick aioli to make the squid sing.
Slice the squid tubes into 5mm thick rings. To make the aioli, whisk together the minced garlic, lemon juice and mayonnaise and set aside.
For the calamari, half-fill a wok or large saucepan with vegetable oil. Place over a medium heat.
While the oil is heating, place the flour, cayenne pepper, smoked paprika and salt in a bowl and stir. Drop in the squid rings and coat evenly.
To test the temperature of the oil, drop in a small piece of bread. If it becomes golden and crispy within a minute, the oil is ready to use.
Dip the floured squid into the beaten egg and carefully place into the oil. Fry for 2-3 minutes until golden. Remove from the oil and let them sit on kitchen roll before serving alongside the aioli
