IPA Teriyaki Shrimp and Pineapple skewers
Ingredients
- 175 ml pineapple juice from a carton
- 1 small piece of fresh ginger (grated)
- 3.5 brown sugar
- 175 ml IPA Beer
- 60 ml soy sauce
- 1 tbsp corn starch
- 2 tbsp water
Instructions
For the sauce
- Bring pineapple juice and grated ginger to simmer.
- Add the brown sugar, the soy sauce and IPA.
- Simmer for 5 minutes and mix the water and the corn starch together.
- Stir to thicken sauce and remove from heat. Let cool off.
For the Skewers
- Heat grill and prepare shrimp and pineapple skewers. Lightly brush or spray skewers with oil so they do not stick to grill's surface.
- While cooking each side apply IPA teriyaki with a brush.
- Cook the skewers for approx. 2-3 minutes per side.
- Remove skewers from grill and apply another generous brushing of IPA teriyaki.
- Sprinkle with fresh coriander and chopped chilli (optional) to give an ever bigger boost of fresh flavours
