Garlic and Tomato Tuscan Salmon
We’re so proud to have collaborated with influencer Lori Campbell of @mybossbuysmelunch this month, with Lori lining up some super healthy and tasty recipes - including this Garlic and Tomato Tuscan Salmon dish which will serve up to 4 people
Ingredients
- 4 Salmon fillets
- 2 tbsp Olive oil
- 2 tbsp Butter
- 1/2 tsp Red pepper flakes
- 1 tbsp Smoked paprika
- 1 tbsp Italian seasoning
- 2 Banana shallots, peeled & finely chopped
- 5 garlic cloves, peeled & grated
- 4 Medium on the vine tomatoes, finely chopped
- 150 g Spinach leaves (about half a bag)
- 1/2 Bunch fresh basil leaves, chopped
- 100 ml Chicken stock
- 100 ml White wine
- Sea salt and freshly ground black pepper
Instructions
- Add the olive oil to a large pan and place on a medium heat
- Add the salmon, red pepper flakes, smoked paprika, Italian seasoning, salt and pepper and cook the salmon on both sides until cooked through (circa 5mins)
- Remove the salmon from the pan and set aside.
- In the same pan add the butter and once melted, add the garlic and onion and cook until soft. Then add the tomatoes, basil and white wine and bubble away until the wine has nearly all reduced
- Add the spinach, chicken stock, check the seasoning and cook for 3-4 minutes until the spinach has wilted and the stock has reduced slightly
- Place the salmon fillets back on top to heat back through and then serve.
