We’re so proud to have collaborated with influencer Lori Campbell of @mybossbuysmelunch this month, with Lori lining up some super healthy and tasty recipes - including this Garlic and Tomato Tuscan Salmon dish which will serve up to 4 people
Add the olive oil to a large pan and place on a medium heat
Add the salmon, red pepper flakes, smoked paprika, Italian seasoning, salt and pepper and cook the salmon on both sides until cooked through (circa 5mins)
Remove the salmon from the pan and set aside.
In the same pan add the butter and once melted, add the garlic and onion and cook until soft. Then add the tomatoes, basil and white wine and bubble away until the wine has nearly all reduced
Add the spinach, chicken stock, check the seasoning and cook for 3-4 minutes until the spinach has wilted and the stock has reduced slightly
Place the salmon fillets back on top to heat back through and then serve.
