Crispy Thai Baked Green Lip Mussels with Coconut Breadcrumbs
A lightly spiced and aromatic Thai starter for 2, topped with crispy coconut breadcrumbs.
Ingredients
- 1/2 box new zealand half shell mussels
- 2 lime, chilli and coriander butter hearts
- 1 sachet coconut, coriander and chilli breadcrumbs
- 1 lime cut into wedges
- 1 tbsp soy sauce
- 2 handfuls salad leaves
Instructions
- Preheat oven to 180°c.
- Crumble the butter portions and evenly sprinkle over each mussel.
- On top of the butter, sprinkle a generous amount of the crumb and place on a preheated baking tray in the centre of the oven.
- Bake for 10-12 minutes, until the mussels are cooked and the crumb has become golden and crispy.
- Whilst the mussels are baking, add salad leaves to a mixing bowl and drizzle with soy sauce and lime juice.
- Place the salad on two plates and arrange the mussels around the salad to serve.
