Courgetti Spaghetti with Pesto and King Prawns
Creating spaghetti from the courgette creates a much lower-carb version of a classic dish.
Ingredients
- 200 g cooked and peeled king prawns
- 2 courgettes
- 1 jar pesto
- parmesan grated
Instructions
- Push the courgettes through a spiraliser to create spaghetti shapes.
- Heat a frying pan over a medium heat and add in the pesto.
- Add in the prawns and the courgetti spaghetti and gently toss, allowing to warm through.
- Serve immediately with a sprinkle of parmesan, if desired.
Notes
King prawns are fat free and high in protein so a great healthy option for tossing through pasta dishes.Â
