Cod with Tomato and Chorizo Sauce
Super quick, healthy and flavour-packed cod dish which uses chorizo slices for a hit of flavour and indulgence.
Ingredients
- 300 g cod loins 1 pack
- 1 tbsp olive oil
- 1 garlic clove sliced
- 80 g chorizo
- 1/2 tsp dried chilli flakes.
- 400 g tin of chopped tomatoes
- cooked green beans to serve
Instructions
- Pre-heat grill to medium heat. Meanwhile, slice the chorizo.
- Heat 1 tablespoon of olive oil in a pan. Cook the garlic and chorizo for a few minutes. Add the chilli flakes and tin of tomatoes. Simmer for 10 minutes until thickened, and season to taste
- Meanwhile, rub the fish with a little olive oil. Season well and grill for around 5 minutes, until cooked through.
- Serve the fish with the sauce and green beans.
Notes
Chorizo is a brilliant ingredient which adds a smoky spiciness to this super cod dish.
