Cod with Tomato and Chorizo Sauce

Super quick, healthy and flavour-packed cod dish which uses chorizo slices for a hit of flavour and indulgence.

Ingredients
  

  • 300 g cod loins 1 pack
  • 1 tbsp olive oil
  • 1 garlic clove sliced
  • 80 g chorizo
  • 1/2 tsp dried chilli flakes.
  • 400 g tin of chopped tomatoes
  • cooked green beans to serve

Instructions
 

  • Pre-heat grill to medium heat. Meanwhile, slice the chorizo.
  • Heat 1 tablespoon of olive oil in a pan. Cook the garlic and chorizo for a few minutes. Add the chilli flakes and tin of tomatoes. Simmer for 10 minutes until thickened, and season to taste
  • Meanwhile, rub the fish with a little olive oil. Season well and grill for around 5 minutes, until cooked through.
  • Serve the fish with the sauce and green beans.

Notes

Chorizo is a brilliant ingredient which adds a smoky spiciness to this super cod dish.
