Cajun Crab Cakes

Ingredients
  

  • 454 g Blue Swimming crab (1 pack)
  • 20 g Dijon Mustard
  • 1 Ripe Tomato
  • 20 g Cheddar Cheese (grated)
  • 50 g Panko Breadcrumbs
  • 2 tsp Cajun Seasoning
  • 50 g Mayonnaise
  • Small handful of flat parsley roughly chopped

Instructions
 

  • Add half the Cajun seasoning to the crab meat and mix thoroughly in a bowl
  • Finely chop the tomatoes and mix with the remaining mayo, Cajun seasoning, Dijon mustard, chopped parsley, grated cheese and panko breadcrumbs
  • Shape the mix into evenly sized patties and pan fry until crisp on both sides,
    Place in the oven to finish cooking for 5-6 more minutes in a preheated 180c oven
