Cajun Crab Cakes
Ingredients
- 454 g Blue Swimming crab (1 pack)
- 20 g Dijon Mustard
- 1 Ripe Tomato
- 20 g Cheddar Cheese (grated)
- 50 g Panko Breadcrumbs
- 2 tsp Cajun Seasoning
- 50 g Mayonnaise
- Small handful of flat parsley roughly chopped
Instructions
- Add half the Cajun seasoning to the crab meat and mix thoroughly in a bowl
- Finely chop the tomatoes and mix with the remaining mayo, Cajun seasoning, Dijon mustard, chopped parsley, grated cheese and panko breadcrumbs
- Shape the mix into evenly sized patties and pan fry until crisp on both sides, Place in the oven to finish cooking for 5-6 more minutes in a preheated 180c oven
