RECIPE INSPO FROM THE ALWAYS COOKING COUPLE

If you follow us on Instagram you’ll have noticed the tantalising recipe ideas we’ve been sharing courtesy of Always Cooking Couple. Emma and Harrison – the dynamic culinary duo behind Always Cooking Couple – can produce the most spectacular meals in the kitchen, and this month we partnered with them to create some tasty fish and seafood based recipes for you to enjoy.

Here’s a couple for you to try this weekend…

Soy Glazed Tuna Steak with Wasabi Mash and Pak Choi

1 tuna steak
Maris Piper potatoes (for the mash)
Wasabi paste
Pak choi to serve

“This was a first for me!” says Emma. “I’ve never cooked a tuna steak myself before but it is one of the easiest pieces of fish I have ever cooked!”. To recreate Emma’s tasty dish just heat your pan, fry the tuna on each side for 1 minute for rare (or 2 minutes if you’d prefer medium rare). “We made a pan of mash and whacked in some wasabi paste, then served it with some pak choi, which we lightly toasted in a dry pan.” The whole dish takes just 30 minutes to create too!

1 tbsp yellow curry paste (our favourite is Mae Jum)
400ml can of light coconut milk
Half a white onion finely sliced
1 red pepper finely sliced
A handful of sugar snap peas
1 red chilli finely sliced
1 small bunch of coriander
1 lime for garnish
1 tbsp palm sugar (optional)
Salt to taste

“Harrison and I love prawns,” continues Emma. “I am quite fussy and only like king prawns, not those little tiny ones, and now I’ve tried these, I don’t think the king prawns in the supermarkets will cut the mustard in comparison to these beauties!”

To recreate this dish just fry the onions and pepper, add curry paste and fry for one minute, then add in coconut milk and palm sugar. Simmer for 5 mins. You’ll then need to cook the prawns in a separate pan if deshelling for the curry, cooking for 1 minute each side. If you’re leaving whole then throw in the curry after 5 minutes, along with the sugar snap peas. Then, just serve and garnish with lime, coriander and chilli!
Emma and Harrison also tried our other produce – including Canadian Lobster. “This is a first for me, I’ve tried lobster once but never have I cooked it, and I’ve never tried Lobster Thermidor before either! It was delicious!” Emma adds.
