by tjames January 25, 2021

We’re so proud to have collaborated with influencer Lori Campbell of @mybossbuysmelunch this month, with Lori lining up some super healthy and tasty recipes using our premium quality fish and seafood.

Here, Lori’s shared her great garlic and tomato Tuscan salmon recipe which will serve up to 4 people, why not give it a go while experimenting with new food ideas this lockdown. A dish like this will certainly help you bring that much-missed restaurant experience to your home!

Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/2 tsp red pepper flakes
  • 1 tbsp smoked paprika
  • 1 tbsp Italian seasoning
  • 2 banana shallots, peeled & finely chopped
  • 5 garlic cloves, peeled & grated
  • 4 medium on the vine tomatoes, finely chopped
  • 150g spinach leaves (about half a bag)
  • 1/2 bunch fresh basil leaves, chopped
  • 100ml chicken stock (I used 1/2 a stock cube)
  • 100ml white wine
  • sea salt and freshly ground black pepper

Method

Add the olive oil to a large pan and place on a medium heat. Add the salmon, red pepper flakes, smoked paprika, Italian seasoning, salt and pepper and cook the salmon on both sides until cooked through (circa 5mins). Remove the salmon from the pan and set aside.

In the same pan add the butter and once melted, add the garlic and onion and cook until soft. Then add the tomatoes, basil and white wine and bubble away until the wine has nearly all reduced. Then add the spinach, chicken stock, check the seasoning and cook for 3-4 minutes until the spinach has wilted and the stock has reduced slightly. Place the salmon fillets back on top to heat back through and then serve.
