#FITWITHFISH SERIES: TASTY LUNCH IDEAS TO KEEP YOU UPBEAT AND HEALTHY WHILST WORKING FROM HOME

The majority of us are working from home again and the novelty of stay-at-home lunches is wearing thin, so we’ve come up with some tasty yet speedy dishes to help keep you motivated and your menu exciting! Here we take a look at three of our favourite tasty lunch options.  

There are only so many cheese and ham sandwiches one person can take – and that (grab!) bag of crisps on the side is doing none of us any good long term. Those summer memories of working from home where lunches consisted of freshly-made salads that we enjoyed whilst sat in the garden have sadly long gone, replaced with monotonous stodge that we can grab from the cupboard or ping in 3 minutes – well its time for a lunchtime overhaul!

So, step away from the laptop, grab the following easy ingredients, and treat yourself to a nutritious, tasty lunch that’ll help you power on through the afternoon session!

Courgetti Spaghetti with Pesto and King Prawns

Quick and simple, this light lunch is perfect for those who are looking for a lower-carb version of spaghetti – but if you want to replace the courgetti spaghetti with the traditional pasta version who are we to say no! Lockdown lunches really are about breaking the habit of eating over your keyboard. Feel free to add in any of your favourite ingredients – and please do share with us how your pimped-prawn dishes turned out!

All you need for this lunch is:

  • 200g cooked and peeled king prawns
  • 2 courgettes
  • 1 jar pesto
  • Some grated parmesan

First, push the washed courgettes through a spiraliser to create spaghetti shapes (or buy a pre-prepared packet available from most supermarkets). Then, heat up your frying pan over a medium heat and add in the pesto. Throw in the prawns and the courgetti spaghetti and gently toss until warmed through. Simply transfer straight to your plate, sprinkle with parmesan and hey-pesto! One lovely lunch served up in under 15 minutes.

Blue Swimming Crab Linguine

Now this really is a delightful alternative to a toastie or a pot of noodles! Packed with flavour and nutrients to keep you happy and heartily fed for a productive afternoon of work, home schooling … or dare we say both! For this beautifully simple pasta dish all you need is:

  • 454g blue swimming crab meat (from our perfectly weighed out tub)
  • 320g dried linguine
  • 2 tbsp olive oil
  • ½ red chilli – deseeded and sliced
  • 3 tbsp chopped fresh parsley
  • Ground black pepper to taste

For this tasty lunch, simply cook the linguine in a large pan of salted water (following times from the packet), then gently heat the oil, garlic and chilli in a frying pan. Once the garlic starts to colour just pop in the parsley and add salt to taste – stir for 30 seconds and then add in the delicious blue swimming crabmeat. Remove from the heat, add to your drained past and stir. Add a drizzle of oil and cracked pepper, serve up and enjoy. This recipe works for 4 people, so is ideal for all the family breaking away from their respective work or studies and sitting down for a quick and tasty lunch together.

Beetroot Gravadlax And Cucumber Bagels

This is the perfect alternative to a desk top sandwich! For those with a heavy day ahead and deadlines to meet – this lunch can be prepped in the morning and kept fresh by wrapping in baking paper and foil so it’s ready when you are. Tasty and filling – this will keep you satisfied until dinner … but we won’t tell if you sneak in a mid-afternoon biscuit! Life is about living, and incorporating healthy nutritious fish in your diet means we can justify the odd treat now and then! All you need for this super simple lunch is:

  • 200g of gravadlax with beetroot (1 pack)
  • 2 whole bagels
  • 75g cream cheese
  • 1 tbsp fresh dill (finely chopped)
  • ½ lemon juiced
  • ¼ cucumber (thinly sliced)

Gravadlax is a delicious addition to any meal – and our version is sustainably farmed Scottish salmon cured using traditional Nordic methods with a Russian twist! Spread the bottom half of the bagels with the scrumptious cream cheese mixture and then arrange the cucumber slices and gravadlax on top. Pop on the bagel lid, sit back, and enjoy every delicious mouthful.
