Cod is a real showstopper of a fish and an extremely tasty and healthy ingredient to work with. Renowned as a rich source of protein, this versatile fish is highly nutritious and packed full of magnesium – a key mineral which helps turn the food we eat into energy. The January chill is still going strong so it’s imperative we take care of ourselves, especially via a nutritious and varied diet during the winter months. Although we can’t blame the weather completely – cold weather can make us susceptible to viruses and colds as they spread more easily in lower temperatures, and outdoor exposure to cold and dry air may adversely impact our immune systems – so ensuring we eat healthy food that is packed full of vitamins is an easy way to help protect ourselves during the wintertime.
Cod is a great fish to enjoy all year round but especially helpful during the darker months as it’s rich in vitamin B12 – an important vitamin to keep nerve and blood cells in tip top condition. B12 can prevent anaemia, a vitamin sometimes lacking in plant-heavy diets, so by incorporating cod into your meals it can provide that much needed boost in winter energy levels.
Additionally, cod is fabulous for those of a certain age! Research shows that eating cod on a regular basis can help keep your brain in good condition as the years creep on … and according to one study, eating baked or broiled fish at least once a week reduces the loss of grey matter in your brain that occurs as we get older.

Baked Cod With Roasted Sweet Potatoes & Crispy Kale
“A brilliant winter warmer is my baked cod with roasted sweet potatoes and crispy kale dish. Baking the cod takes up less kitchen space and is the best way to protect the fish from possible breakage – meaning your dish will look just as beautiful as it tastes! By incorporating sweet potato and kale, you’re not only boosting the vitamin content but adding vibrant vegetables to your plate on a dull winter’s day. It’s definitely one of my ‘happy’ meals and takes a total of 30 minutes from prep to service – so my hungry table companions are equally happy too!”

“Everyone loves a stew when it’s cold, so my simple and speedy cod, butter bean and tomato stew is always a winner. It’s far from an old-fashioned stodgy stew – but a tasty and filling dish which doesn’t make you feel lethargic and sluggish afterwards. With a super easy 5-minute prep time, 20-minute cook time, and incorporating cupboard staples such as onions, garlic and chopped tomatoes – it’s a really enjoyable dish to cook too.
