King Prawn Stir Fry with Vegetable Rice
A quick and simple dish that is great for boxing up and taking to work the next day for a healthy and filling lunch.
Ingredients
- 200 g cooked and peeled king prawns
- 1 red onion finely sliced
- 1 red pepper finely sliced
- 2 spring onions finely sliced
- 1 garlic clove minced
- 1 lemon cut into wedges
- 100 g frozen peas
- 1 green chilli finely diced
- 1 small handful coriander leaves
- 1 pouch microwaveable wholegrain rice
- soy sauce or sweet chilli sauce to taste
- sesame oil
Instructions
- Heat a wok over a medium heat.
- Add 1 tbsp of sesame oil to the pan. Once hot, add in the red onion, red pepper and spring onions and fry until lightly cooked.
- Add in the garlic and cook for 2-3 minutes. Add the prawns, peas and rice to the pan and cook along with a squeeze of lemon juice for a further 2-3 minutes until all combined.
- Divide between two plates and garnish with chopped coriander, chilli and a light drizzle of soy sauce or sweet chilli sauce, if desired.
Notes
King prawns are a great source of protein and amino acids. This is great to save for a health and filling lunch.Â
