Add 1 tbsp of sesame oil to the pan. Once hot, add in the red onion, red pepper and spring onions and fry until lightly cooked.
Add in the garlic and cook for 2-3 minutes. Add the prawns, peas and rice to the pan and cook along with a squeeze of lemon juice for a further 2-3 minutes until all combined.
Divide between two plates and garnish with chopped coriander, chilli and a light drizzle of soy sauce or sweet chilli sauce, if desired.
