Steam-Roasted Salmon and Broccoli with Lime, Ginger, Garlic and Chilli
Everyone loves a simple one-dish recipe and this is no exception. Superb tasting and super healthy.
Ingredients
- 560 g salmon fillets 2 packs
- 400 g broccoli
- 2 garlic cloves minced
- 4 tbsp vegetable oil
- 2 spring onions finely chopped
- 2-3 cm fresh ginger peeled and grated
- 1 red chilli finely sliced
- 2 tbsp fish sauce
- 2 limes zest and juice
- 30 g fresh coriander finely chopped
- 55 g peanuts
Instructions
- Preheat the oven to 180°C fan / 200°C / Gas 6.
- Wash and dry broccoli, placing florets in a large roasting tin. Scatter over the minced garlic, sprinkle over the oil and toss well to mix.
- Place the salmon fillets into the roasting tin along with the broccoli. Cover the tin tightly with foil and transfer to the over for 20-25 minutes until the salmon is cooked through.
- Meanwhile mix together the spring onions, ginger, chilli, fish sauce, sesame or vegetable oil, lime zest and juice, coriander and peanuts. Adjust the levels of fish sauce and lime juice to taste.
- Once the salmon is cooked remove from the oven and generously coat with the dressing. Serve immediately.
Notes
This punchy dressing, suitable for virtually any protein, works especially well on rich salmon.
