Luxury Surf and Turf Burger

Ingredients
  

  • 150 g cooked lobster claw meat
  • 2 tablespoons mayonnaise plus more for assembling
  • 1 teaspoon juice from 1 lemon
  • 1 tablespoon finely chopped chives
  • ground black pepper
  • 20 ounces freshly ground beef divided into four 5-ounce patties
  • 4 burger buns
  • 2 tomatoes
  • 4 leaves green leaf lettuce
  • 8 slices crisply cooked bacon

Instructions
 

  • Mix some mayo, lemon juice, and chives in a small bowl. Sprinkle in a little salt and pepper. Add some chilli flakes or chopped jalapenos if you'd like to add some heat. Refrigerate until ready to use.
  • Fry the burger patties on a hot griddle or in a skillet on the stove. Top with cheese for the last minute of cooking. Turn off the heat and let the burger patties rest for 5 minutes.
  • Top and bottom buns with mayonnaise and then add lettuce, followed by the tomato. Top with the cheesy burger patty, then add the bacon and 2-3 lobster claws to each burger. Put the bun on the top of the burgers and serve immediately.
