Whole Baked Seabass with Mediterranean Tomatoes, Garlic and Potato Bake
A one tray, bake in the oven dish packed full of wonderful Mediterranean flavours, perfect to serve as a table centre piece
Ingredients
- 1 whole Seabass
- 1 bulb of Garlic split into cloves, no need to peel or chop
- 1 bunch of Thyme
- 3 medium potatoes peeled and sliced approx. ½ cm thick
- 2 or 3 large tomatoes halved
- 1 large onion sliced finely
- 2 slices lemon
- 3 tbsp good quality Olive Oil
Instructions
- Drizzle a small amount of the olive oil in the bottom of an oven proof dish and lay the slices of potato into the tray, these can overlap a little and season with salt and pepper. Scatter with a generous amount of thyme and garlic cloves dotted about.
- In the cavity of the seabass place the lemon slices, a few thyme sprigs and a couple of cloves of garlic, drizzle a tbsp. of oil over the seabass and season with salt and pepper and lay on top of the potatoes.
- Place the tomatoes on the potatoes and sprinkle with a little white sugar and thyme,
- Drizzle over the whole tray any remaining oil and place in the centre of a preheated oven at 180.c for 20-25 minutes
