A delicious twist on a Chinese cuisine favourite

Ingredients
  

For the cod

  • 300 grams Frozen At Sea Atlantic Cod Loins cut into 1 inch pieces
  • 1/2 tbsp salt
  • 1 pinch white pepper
  • 1 egg beaten in a separate bowl
  • 4 tbsp cornflour

For the sauce

  • 35 ml white vinegar
  • 50 grams white sugar
  • 30 grams tomato ketchup
  • 10 grams Worcestershire sauce
  • 1 tpsp cornflour

For the garnish

  • 100 grams fresh pineapple chunks
  • 1 white onion diced into 1 inch pieces
  • 1 medium red pepper diced into 1 inch pieces
  • 1 medium green pepper diced into 1 inch pieces

Instructions
 

  • 600ml veg oil or approx. 1 inch deep oil in a sauce pan
  • Season the cod with about 1/4 tsp salt and sprinkle of white pepper. Pour half a beaten egg in and coat the king prawns. Then mix in the potato starch (or cornflour) and coat the pieces again.
  • Turn the oil to low heat. Take the cod and place them individually into the oil. Move them around, with a wooden spatula or wooden chopsticks, so they don't stick to each other. Fry them for 3 minutes.
    When the cod start to float, turn the heat to high and fry for an extra 1 minute. Use a slotted spoon and take the pieces out onto a plate and leave on the side for now.
  • To assemble the dish, heat up 1 tbsp. of veg oil once hot, fry the onions peppers and pineapple add the cod pieces, mix and add in the sauce, one final good mix up and serve with boiled rice or noodles
  • To make the sweet and sour sauce: In a saucepan pour the vinegar and add the granulated sugar in, heat these up on a low heat until the sugar dissolves
