Simple Seafood Paella
Quick to prepare and easy to make, this authentic Spanish seafood dish looks as good as it tastes and is perfect for any occasion. Recreate the flavours of Valencia at home in just a few simple steps.
Ingredients
- 200 g Seafood Mix defrosted
- 180 g basmati rice
- 1 tbsp turmeric
- 1 white onion chopped
- 2 garlic cloves crushed
- 1 handful parsley roughley chopped
- 1 lemon
- 100 g chorizo diced
Instructions
- If you’re cooking your own rice, follow the instructions on the pack and add one tablespoon of turmeric to the pan.If you’re using yellow rice, pour 180g into a bowl and set it aside.
- Place a separate frying pan on medium heat and add two tablespoons of vegetable oil. Once the oil is hot, add the chorizo and onion and continue to fry until they begin to colour. Finally, add the garlic and stir.
- Strain the cooked rice through a colander, allowing the excess water to drain into a bowl. Set the bowl aside and gently add the rice to the frying pan. Reduce to a low heat.
- Add the seafood mix, stirring it well to ensure it cooks evenly. If you notice the mix getting a little too dry, add a splash of the rice water we set aside. Cover the pan and cook for five minutes.
- Once the seafood mix is cooked, remove the pan from the heat. Add the parsley and a squeeze of lemon juice. Leave to stand for one minute and serve.
