Savoury Waffles with Dill Gravadlax

Savoury waffles are a great option for a wholesome brunch or lunch. If you don’t have a waffle maker, serve with pancakes instead.

Ingredients
  

  • 200 g gravadlax with dill 1 pack
  • 250 g plain flour
  • 2 tsp baking powder
  • 2 whole eggs
  • 300 ml milk
  • 2 tbsp melted butter
  • vegetable oil for oiling the waffle maker

Instructions
 

  • Turn the waffle maker on to heat, and put the oven on a low setting.
  • Mix the flour and baking powder in a bowl and make a well in the centre.
  • Break in the eggs and pour in the milk and melted butter. Use a whisk to gradually incorporate all of the flour from round the outside.
  • Spoon some of the batter into the waffle maker and close the lid. Cook for around 4minutes, until the waffles are golden brown. Repeat until all the batter has been used, keeping the finished batches warm in the oven.
  • Assemble waffles on to your serving plates, then drape the dill gravadlax on top.

Notes

Serve with poached eggs or smashed avocado for a more filling dish, or top with a creamy horseradish sauce for an added kick.
