Ingredients

  • 200 g smoked salmon 1 pack, thinly sliced
  • 455 g penne pasta
  • 3 cloves garlic minced
  • 1 whole medium onion finely diced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 50 ml vodka
  • 390 g tomato passata
  • 100 ml double cream
  • 1 pinch chilli flakes
  • 1 pinch salt and pepper to taste

Instructions

  • Cook the penne pasta as instructed on pack, and drain.
  • In a saucepan, fry off the garlic and onions in the butter and olive oil over a medium heat until soft. Pour in the vodka, being careful around open flames, and cook for 2-3 minutes until reduced.
  • Pour in the tomato puree and stir until thoroughly combined, then reduce the heat to a gentle simmer. Add in the double cream and stir well. Sprinkle in the chilli flakes and smoked salmon at the very end to gently warm through.
  • Pour the drained pasta into the sauce and toss to combine.

Notes

Roasted red peppers in brine, found in most supermarkets, are a great addition to this recipe. Simply drain and thinly slice, adding to the sauce at the same time as the smoked salmon. This gives a more robust flavour to the dish, and helps bulk out the sauce.
