Penne alla Vodka and Smoked Salmon
For a simple midweek meal, smoked salmon stirred quickly through pasta and sauce is always a winner. Jazz up this classic recipe with a good glug of vodka, for that extra kick.
Ingredients
- 200 g smoked salmon 1 pack, thinly sliced
- 455 g penne pasta
- 3 cloves garlic minced
- 1 whole medium onion finely diced
- 3 tbsp butter
- 2 tbsp olive oil
- 50 ml vodka
- 390 g tomato passata
- 100 ml double cream
- 1 pinch chilli flakes
- 1 pinch salt and pepper to taste
Instructions
- Cook the penne pasta as instructed on pack, and drain.
- In a saucepan, fry off the garlic and onions in the butter and olive oil over a medium heat until soft. Pour in the vodka, being careful around open flames, and cook for 2-3 minutes until reduced.
- Pour in the tomato puree and stir until thoroughly combined, then reduce the heat to a gentle simmer. Add in the double cream and stir well. Sprinkle in the chilli flakes and smoked salmon at the very end to gently warm through.
- Pour the drained pasta into the sauce and toss to combine.
Notes
Roasted red peppers in brine, found in most supermarkets, are a great addition to this recipe. Simply drain and thinly slice, adding to the sauce at the same time as the smoked salmon. This gives a more robust flavour to the dish, and helps bulk out the sauce.
