Luxury Prawn and Salmon Filled Pancakes

Move aside boring old pancakes, as we have the perfect Pancake Day option for you, seafood lover. This particular recipe calls for smoked salmon and king prawns, but you can use any type of seafood that takes your fancy, such as crab, scallops, or squid tubes.

Ingredients
  

For the pancakes

  • 100 g plain flour
  • 1 large egg
  • 1 tbsp butter
  • salt to taste as needed
  • 250 g milk

For the filling

  • 200 g Seafood by Sykes Smoked Salmon
  • 1/2 pack Seafood by Sykes Large Cooked & Peeled King Prawns
  • 1/2 tbsp plain white flour
  • 1/2 tbsp unsalted butter
  • 250 ml milk
  • 15 g mushrooms cleaned and sliced
  • 1 tbsp fresh dill finely chopped
  • salt to taste
  • freshly ground black pepper to taste
  • 2 tbsp grated cheese of your choice

Instructions
 

Make the pancakes

  •  sieve the flour into a large baking bowl and add salt
  • Make a well in the center of the flour, add in the eggs and beat until the batter is smooth and free from lumps.
  • Add half the milk and the melted butter and mix well. Add the remaining milk and stir & let the batter rest for 15 minutes.
  • Lightly grease a crêpe pan or nonstick pan with melted butter, heat until hot, and add a big spoon of batter to evenly and thinly coat the base of the pan. Cook until set and lightly golden. Flip and cook for 30 seconds.
  • Remove the pancake from the pan, place it on a sheet of kitchen paper and keep it warm. Repeat the process until all the batter is used up.

For the filing

  • Melt the butter in a large saucepan over low heat. Add the flour and stir until the flour is well mixed in. Add a pinch of salt and pepper and continue stirring for 2 minutes.
  • Turn the heat up to medium, add the milk, whisk until a smooth sauce is formed. Continue stirring until the sauce is thickened and glossy (about 5 minutes). The sauce should be thick but still pourable. Once desired consistency, remove from the heat.
  • Place a pancake on top of the worktop and put a 1/4 of the seafood sauce mixture into the center of the pancake and spread through to both ends in a thin line.  Fold the opposite edge of the pancake over the filling, and then roll the pancake into a thick sausage shape. Place the pancake into an ovenproof baking dish. Repeat with the remaining three pancakes.
  • Finally, Sprinkle the cheese over the pancakes and bake in the preheated oven for 20 minutes or until the cheese is melted but not browned. Serve immediately.
