Japanese Style Miso Glazed Cod Recipe

Miso, soy & honey glazed cod, grilled until caramelised and then served over steamed rice alongside savoury, sauteed asparagus. A sophisticated, light meal that delivers on big flavour.

Ingredients
  

  • 2 frozen at sea atlantic cod loins
  • 1 pack of asparagus tips quartered
  • 3 spring onions thinly sliced
  • 250 g brown rice
  • sesame seeds to serve

Instructions
 

  • For the cod marinade, Mix the SHIRO MISO PASTE with the SOY & HONEY SAUCE in a small bowl.
  • Put the grill onto medium-high and put the cod fillets onto a lined baking tray, skin side down. Spread 1 tsp of the Miso mixture onto each fillet to create a thin coating.
  • Grill the cod for 8 mins, or until the marinade begins to bubble and turn golden and the fish is just starting to flake.
  • Meanwhile, heat a little oil in a pan over medium-high heat and when hot, add the asparagus. 
  • Fry for 2 mins to slightly brown and blister the asparagus, then turn the heat down, add a splash of water (or a knob of butter) and the YASAI SEASONING and mix well for 2 mins.
  • For finishing touches, heat the rice according to pack instructions, loosen the rest of your Miso sauce by adding 2 tsps of water to get it to drizzling consistency.
  • Serve the cod over rice with the asparagus alongside. Sprinkle with spring onions and sesame seeds (if using) and drizzle with more of your miso sauce.
