Ingredients
- 56 g smoked mackerel pate
- 1 whole baking potato
- butter to serve
Instructions
- Bake your potato in your preferred method. If you are short on time, stab a fork into the potato a few times, microwave for 10 minutes, then crisp up in a hot oven for another 10 minutes.
- Split the potato, add a knob of butter, allowing to melt. Spoon the mackerel pate into the jacket and serve with a simple side salad for an easy, nutritious and filling dish.
