Hake With a Chorizo & Bean Broth

Ingredients
  

  • skin on hake fillets
  • 1 tin cannellini beans
  • 100 g chorizo chopped into chunks
  • 1 white onion finely diced
  • 3 garlic cloves sliced
  • 2 tsp paprika
  • 1 handful of fresh chopped dill
  • 1 bay leaf
  • 500 ml chicken stock
  • Optional croutons

Instructions
 

  • Heat oil in a pan and fry the onion until softened, then add the chorizo and garlic and continue to fry until the chorizo has released its tasty oils.
  • Add the paprika, beans and bay leaf, and stir for 1 minute.
  • Add the chicken stock and dill, and bring the broth to the boil, then reduce to a simmer. Simmer for 15 minutes.
  • In a separate pan, heat some oil and when hot add in the hake fillets and fry (skin side down) for 4 minutes, then flip and cook for a further 4 minutes.
  • Dish out the broth and place the hake on top and sprinkle over your dill, and we chucked on some homemade croutons too!
