Hake With a Chorizo & Bean Broth

Ingredients
- skin on hake fillets
- 1 tin cannellini beans
- 100 g chorizo chopped into chunks
- 1 white onion finely diced
- 3 garlic cloves sliced
- 2 tsp paprika
- 1 handful of fresh chopped dill
- 1 bay leaf
- 500 ml chicken stock
- Optional croutons
Instructions
- Heat oil in a pan and fry the onion until softened, then add the chorizo and garlic and continue to fry until the chorizo has released its tasty oils.
- Add the paprika, beans and bay leaf, and stir for 1 minute.
- Add the chicken stock and dill, and bring the broth to the boil, then reduce to a simmer. Simmer for 15 minutes.
- In a separate pan, heat some oil and when hot add in the hake fillets and fry (skin side down) for 4 minutes, then flip and cook for a further 4 minutes.
- Dish out the broth and place the hake on top and sprinkle over your dill, and we chucked on some homemade croutons too!
