Grilled Tuna with Citrus Dressing, Rocket and Red Onion salad
Combining all the Asian flavour profiles - sweet, salt, spice and bitter - perfectly balanced to create an authentic dressing or dipping sauce which pairs exceptionally well with freshly griddled rare tuna. The addition of the fresh chilli, mint and coriander leaves incorporated into the rocket and red onion salad really intensifies the freshness of this dish.
Ingredients
- 2 tuna steaks
- 8 tbsp olive oil
- 2 handfuls rocket leaves
- 1 red onion thinly sliced into rings
- 4 tbsp soy sauce
- 1 orange zested and juiced
- 1 lemon zested and juiced
- 1 lime zested and juiced
- 2 garlic cloves crushed
- 1 inch fresh ginger grated
- 3 tsp sugar
- 1 small chilli chopped
- 1 handful mint leaves
- 1 handful coriander leaves
Instructions
- In a small saucepan, add the olive oil, soy sauce, orange, lemon, lime, garlic cloves, ginger, sugar, chilli, mint and coriander. Over a high heat, bring the mixture to the boil, then simmer gently for 4-5 minutes until it has reduced and become thicker in consistency. Leave to one side.
- Brush the tuna steaks with olive oil and season with salt and pepper. In a hot griddle pan, sear quickly on both sides for 2-3 minutes in total.
- Place the rocket leaves and red onion onto a plate. Place the seared tuna on top and dress generously with the citrus dressing.
