Grilled Swordfish with Lemon, Mint and Basil
A quick, simple and fresh swordfish recipe that echoes the freshness of the Mediterranean.
Ingredients
- 2 swordfish loin steaks approx 340g
- 1 tbsp olive oil
- 3 tbsp fresh mint leaves chopped
- 3 tbsp fresh lemon juice
- 1 tbsp fresh basil leaves chopped
- 1 garlic clove minced
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Heat a griddle pan over a medium-high heat.
- Whisk the oil, mint, lemon juice, basil and garlic in a medium bowl to blend. Season the mixture with salt and pepper to taste.
- Brush the swordfish steaks with 2 tbsp of the mixture and grill until just cooked through. This should take around 2 minutes per side. Transfer the steaks to plates and spoon the remaining mixture over and serve.
- Serve on a bed of freshly cooked tagliatelle.
Notes
Cooking swordfish on a griddle pan means you get all the beautiful charred flavour without adding unnecessary fats. You can make the oil and lemon mixture ahead of time and leave the steaks to marinade for up to an hour prior to cooking.
