Baked Salmon with Lemon, Thyme and Wilted Spinach
Baking salmon is a quick and healthy way to cook with convenience, reducing space required in the kitchen.
Ingredients
- 2 atlantic salmon portions
- 1 bag baby spinach washed and ready to cookq
- 1 lemon zested and juiced
- a few sprigs thyme leaves removed
- cracked black pepper to taste
Instructions
- Pre-heat your oven to 180°c. Line a baking tray with foil and lay the salmon on top. Season with cracked black pepper, lemon zest and thyme leaves. Loosely wrap the salmon and bake in the oven for 10-12 minutes.
- While the salmon cooks, add the spinach to a medium frying pan.
- Squeeze any excess water from the spinach and return to the pan. Add the juice of the lemon and mix together.
- Place the spinach on two plates and, once the salmon is cooked, place on top of the spinach.
Notes
