Place all the ingredients for the sauce into a small foodprocessor and blitz until smooth and green
Mix together the olive oil, minced garlic, lemon juice,honey, parsley, salt, and pepper in a large bowl. Toss the shrimp in the marinade, and let itchill in the fridge for about an hour.
Assemble the skewers by alternating the shrimp, bell peppers,and onions. Repeat 3 or 4 times until the kabab is filled.
Preheat your grill (or grill pan or BBQ) to medium-high heat, and grill the skewers for 2-3 minutes per side. Once the shrimp is pink and opaque, it’s done.
