South American Citrus Marinated Shrimp
Fresh, zingy and a little bit spicy. There is no cooking required here, just a little time needed to prep and marinade.

- 200 g cooked and peeled king prawns
- 1 red onion finely sliced
- 1 green chilli finely diced
- 2 limes zested and juiced
- 1 orange zested and juiced
- 1 handful coriander roughly chopped
- 1 handful mint roughly chopped
- 1 tsp tabasco
- 1/2 small cucumber thinly sliced
- 2 handfuls rocket leaves to serve
- 6 cherry tomatoes quartered
In a medium sized mixing bowl, add all the ingredients, except for the rocket, mint and coriander.
Mix together and leave to marinade for 5 minutes.
Once done, add the mint and coriander. Mix together and leave for a further 2 minutes.
After the 2 minutes, add the rocket leaves and serve immediately.
