Our hot smoked salmon portions are rich on flavour, so require little work to pack a punch. We love this creamy gratin for a simple supper during the week.
Preheat the oven to 160ºc and lightly grease 1 small baking dish with 1 tbsp olive oil.
In a frying pan, fry the chorizo over a medium heat, stirring continuously. No need to oil the pan as the oils released from the chorizo will keep this from sticking. Add in the leeks and continue to fry for 3-4 minutes until the leeks soften.
Spoon the chorizo and leek mixture into the baking dish, flake through the salmon portion and cover with cream.
Bake in the oven for 10 minutes. Sprinkle the parsley on top as a garnish before serving.
Notes
This dish is easily scaled up to feed more, and adjusted to suit different tastes. We like to scatter breadcrumbs on top before baking for a crunchy topping.
