Pan Fried Seabass with Soy and Sweet Chilli Stir Fry
Give your simple stir fry a flavour-packed punch with fresh chilli, coriander and mint. Quick, easy and healthy, this is great for a midweek meal.

- 2 seabass fillets
- 320 g mixed stir fry veg
- 2 red chilies sliced
- 1 bunch coriander
- 1 bunch mint
- 170 g sweet chili sauce
- soy sauce dash
Heat a little olive oil in a small frying pan, and add in the seabass fillets skin side down. Fry for 5-7 minutes, turning halfway through.
In a large pan, heat 3 tbsp of vegetable over a high heat. Add in the vegetable and stir continuously. After 2-3 minutes reduce the heat and add the sliced chili, soy sauce and sweet chili sauce. Cook for a further 2-3 minutes.
Divide the vegetables between two plates and place the Seabass fillets on top. Garnish with fresh coriander and mint leaves.
