Smoked Salmon and Smashed Avocado on Rye Toast

Smoked Salmon and Smashed Avocado on Rye Toast

Ingredients
  

  • 200 g Scottish Smoked Salmon
  • Salt and freshly ground black pepper
  • 15 g Butter
  • 1 small Red chilli Chopped
  • 1 Small handful of coriander leaves Chopped; reserve some for garnish
  • 4 slices Rye bread
  • 1 Lime Juiced
  • 2 Avocados Ripe and ready to eat

Instructions
 

  • Cut, destone, peel and roughly chop the avocado into a medium sized mixing bowl, season with salt and pepper, add the lime juice, chopped coriander and red chilli smash altogether with a fork and set aside until needed.
  • Toast the Rye, butter each piece and place on individual plates
  • Divide the smashed avocado evenly between the 4 slices of toast, lay equal amounts of smoked salmon on top and garnish with the remaining coriander leaves
