Smoked Salmon and Smashed Avocado on Rye Toast
- 200 g Scottish Smoked Salmon
- Salt and freshly ground black pepper
- 15 g Butter
- 1 small Red chilli Chopped
- 1 Small handful of coriander leaves Chopped; reserve some for garnish
- 4 slices Rye bread
- 1 Lime Juiced
- 2 Avocados Ripe and ready to eat
Cut, destone, peel and roughly chop the avocado into a medium sized mixing bowl, season with salt and pepper, add the lime juice, chopped coriander and red chilli smash altogether with a fork and set aside until needed.
Toast the Rye, butter each piece and place on individual plates
Divide the smashed avocado evenly between the 4 slices of toast, lay equal amounts of smoked salmon on top and garnish with the remaining coriander leaves
