Roasted Side of Salmon with Green Beans and Roast Potatoes
- 1 Whole Side of Scottish Salmon
- 600 g roasting potatoes peeled and cut into quarters
- 3 tbsp vegetable oil
- 4-5 cloves of garlic
- 1 small handful of parsley leaves
- 100 g butter
- 2 lemons one juiced, one sliced
- 1 tbsp sugar
- salt and pepper to taste
Preheat oven and large baking tray to 200.cWhile the oven is heating up, toss the cut potatoes in the veg oil, season to taste with salt and pepper and roast in the oven for 15-20 minutes or until just softening and taking on colour. Remove the tray with the potatoes from the oven, place the whole side of salmon on top of the potatoes, season the salmon with salt and pepper and return to the oven for 10 minutes.
While the salmon is cooking, Melt butter in a small mixing bowl and whisk in garlic, parsley, lemon juice, and sugar.
Take the salmon from the oven, scatter around the green beans around the tray, Spread half the garlic butter mix over the top of the salmon and place the rest on the tray around
Serve the salmon potatoes and green beans as a table centerpiece for everyone to tuck into and enjoy.
