Cod Cheek Paella

Ingredients
  

  • 1 pack Seafood by Sykes Atlantic cod cheeks (defrosted)
  • 500 g Paella rice
  • 1 Red Pepper (chopped)
  • 1 Onion (finely chopped)
  • 1 Garlic clove (finely chopped)
  • 2 cubes Vegetable stock for water quantity see your stock cube instructions – add no more than 380ml
  • 150 g Frozen peas
  • 4 stems Tenderstem broccoli
  • 0.5 tsp Turmeric
  • 0.5 tsp Smoked paprika
  • olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat paella pan over a medium heat and add cooking oil
  • Add paella rice and toss in the pan with finely chopped onions and garlic for 1-2minutes
  • Add the cod cheeks (defrosted), chopped red peppers and frozen peas
  • Stir together for 2 minutes
  • Slowly pour in the vegetable stock and simmer the mixture over the heat
  • Add salt and pepper
  • Add smoked paprika and turmeric and leave to simmer for a further 15 minutes
  • While the broth is cooking, steam the broccoli for 2 minutes in a microwave so that it is tender
  • Chop tenderstem broccoli and add to the paella to serve
