Halibut is one the kings of the sea! We freshly freeze our skin-on bone-in halibut shortly after catch, meaning it can be enjoyed year round. Come rain or shine, you can be safe in the knowledge that the fish was handled throughout the supply chain in a frozen state, locking in freshness and quality.
Halibut is an indulgent, sweet-tasting fish with brilliant white flesh, cooked on the bone which results in a more flavoursome dish. It is tremendously versatile, suiting pan frying, grilling and “en papillote” in the oven. It is delicious with bolder seasonings like capers and lemon. Each portion is individually vacuum-packed for easy storage and defrosting.

Halibut is a beautiful luxurious fish, however it can dry out if over cooked. I like to heat some butter in a hot frying pan and wait for it to foam. I add the halibut with a few sprigs of rosemary, I cook this fast only 1-2 minutes on each side and then off the heat and to rest for a minutes. I serve on a bead of wilted spinach, crushed new potatoes and big squeeze of lemon.
