I have been working with seafood for almost 20 years now. I have to confess I have only recently appreciated the quality of UK caught hake. It has now become my go to whitefish of choice, pan-fried skin side down and lightly seasoned is all hake needs. Our thick centre cut portions are staple in my freezer – I now know why the Spanish rave about this species.
There are numerous ways to cook hake. It takes on flavour well as it has a firm flesh and a taste not dissimilar to Cod. You can pan-fry, roast, poach or grill. In terms of versatility, it’s hard to beat.
