King Prawn Stir Fry with Vegetable Rice

A quick and simple dish that is great for boxing up and taking to work the next day for a healthy and filling lunch.

Ingredients
  

  • 200 g cooked and peeled king prawns
  • 1 red onion finely sliced
  • 1 red pepper finely sliced
  • 2 spring onions finely sliced
  • 1 garlic clove minced
  • 1 lemon cut into wedges
  • 100 g frozen peas
  • 1 green chilli finely diced
  • 1 small handful coriander leaves
  • 1 pouch microwaveable wholegrain rice
  • soy sauce or sweet chilli sauce to taste
  • sesame oil

Instructions
 

  • Heat a wok over a medium heat.
  • Add 1 tbsp of sesame oil to the pan. Once hot, add in the red onion, red pepper and spring onions and fry until lightly cooked.
  • Add in the garlic and cook for 2-3 minutes. Add the prawns, peas and rice to the pan and cook along with a squeeze of lemon juice for a further 2-3 minutes until all combined.
  • Divide between two plates and garnish with chopped coriander, chilli and a light drizzle of soy sauce or sweet chilli sauce, if desired.

Notes

King prawns are a great source of protein and amino acids. This is great to save for a health and filling lunch.
